I love ground beef taco's with taco seasoning in the beef. Unfortunately I've already done so much damage to my body I feel I should replace a couple meat filled dishes with vegetarian ones. What's your favorite vegetarian taco recipe that gives you the comfort of meat and is also filling as well?

OK they aren’t vegetarian but if you use a healthy fish then they’re still better for you than red meat. If you want no meat or fish, then this black bean taco recipe is nice:

A lot of tacos are meat and/or dairy-free and you can make you your own versions too. If you use mushrooms they offer some of the “meatiness” you might be missing. You could even get a type of vegetarian ground beef which is made from TVP or quorn. It tends to be dry so you will need to mash it with avocado or cheese, or something moist.
Heat some refried beans with taco seasoning. Put on a warm tortilla and top with salsa/picante, chopped onions, lettuce and sliced jalepenos. Yummy! Can also put avacados on it. If you need to put on some shredded cheddar, cheddar jack, taco, or mexican blend cheese and a dab of sour cream or yogurt.
Tacos are amazing with black beans which are low fat, protein rich and full of vitamins!
Fry some onions and garlic (and chilli if you like the heat), add mexican seasoning to taste (paprika, chili powder, garlic powder,oregano, cumin, etc) and stir for 1-2 minutes. Add pre-soaked or a drained tin of black beans and fresh or chopped tin tomatoes, stir and add a little water, salt and pepper. Simmer until beans are soft.
Serve in tacos with shredded lettuce, tomato salsa, fried onion and pepper strips in Mexican seasoning, grated cheese and jalapeƱos.
grilled portobello, crispy fried onion, a mix of lightly sauteed yellow pepper, green and yellow zucchini strips, shredded soy cheese,roja salsa ( made with roasted red and orange peppers, chil and tomatoes) black beans and vegan sour cream. Add a spoonful of guac for topping.
Believe me, if you prep all those foods so you have backups, and make these tacos…um um.
Well I’m vegetarian and when I have tacos I like to put casserole mince into them. It’s a vegetarian alternative to mince which comes in tins in NZ (not sure what you can get in other countries).
Often when I’m out they put different things in such as chili beans. I was at a camp last week and the vegetarians got tacos with this filling which was rice and corn blended together… very weird.
But I’d recommend a vegetarian mince.
Refried black beans work well with all your favorite toppings, salsa, guacamole, Tofutti sour cream, nutritional yeast, lettuce.
Or seitan, seasoned with traditional taco seasonings (same as you used before) then build your taco.
Just made some tacos last night using TVP (texturized vegetable protein). It comes dry and looks like Grape-nuts….just reconstitute it 1:1 hot water. Then you can use it like you would use ground beef. I just fried it up with a packet of taco seasoning (vegan, of course), piled some on taco shells with salsa and avacado…yum! Looks just like ground beef and has the same mouth feel.
I’m not a vegetarian but look for foods that have similar textures and tastes, protein content etc, such as mushrooms, kidney beans, lentils, refried beans, chopped walnuts, brazil nuts, you get the idea
and you can still use seasonings and spices . Don’t feel restricted by a vegetarian diet! Meat is only one component of a meal and can easily be replaced , good luck

Definitely the base would be refried beans, either pinto or black. Soak dried overnight and cook until tender or use canned. Saute onions, garlic, and optional jalapeno peppers, season with salt, pepper, and cumin, add to beans and mash or puree with submersion blender. Pan fry corn tortillas for a couple seconds on each side over high heat. Top with beans, then add optional queso cheese, salsa or fresh tomatoes (or both), red onions, fresh cilantro, leaf lettuce, spinach, hot/mild sauce, sour cream, avocado, guacamole, diced peppers (jalapeno, bell), all or a combination of some of the above, or anything else that you fancy. Many Mexican restaurants use only beans, onion, cilantro, and sauce, and the result is delicious. The key is to use fresh ingredients. You could also combine the above and use with tortilla chips. Or as a burrito filling. You could roll up tacos with beans, cover with Mexican tomato sauce or mole, cheese, and bake for enchiladas. All of these I found as a vegetarian to be equally as filling and satisfying as meat.
Just a tip about the cilantro if you choose to use it. Cilantro stems are tender and edible. Just trim off the very ends of the stems and chop the rest fine, then add chopped stems and all to your dish. I used to peel the leaves from the stems until I found they are quite edible, and quite flavorful.
Lentil Tacos. Absolutely delicious and the lentils taste very similar to taco meat. Cook any amount of lentils you want. In the meantime, depending on how many lentils you make, saute a 1/4 to a 1/2 of a large onion in about a teaspoon and half of olive oil. Mix the onions with the lentils and mix about a tablespoon(or depending on how spicy you like your food) of cumin into the lentils. You can also add garlic powder and parsley flakes. Put the lentils in a tortilla and there you go. I like to add lettuce, freshly chopped onion, salsa, gauc, etc.to mine. Cheese is also an option, if you eat it.
